I’m (Almost) Bulletproof

So, in my quest to reset my metabolism and fighting the effects of the last two years, I’ve been looking to jumpstart my diet. In looking around, speaking to my doctors and talking with friends who are doing different things, I settled on trying the Bulletproof Diet. One of the reasons is that I’ve been using fasting (prior to my last surgery in December) and incorporating Intermittant Fasting (known as 16:8) was going to be easy. This is basically a Ketogenic Diet with some twists.

Quick note: I’m also drinking 2 teaspoons of Apple Cider Vinegar and 1 teaspoon of raw honey in 8oz of water at least once a day, usually first thing in the morning.

The breakfast component of this diet is Bulletproof Coffee. You can go to the site and buy Dave Asprey’s products, I asked around from people who’ve been drinking this for a while — some for years — for alternatives.

Breakfast — Bulletproof Coffee (I use the pour-over method)

I boil enough water to wet the paper filter in my ceramic pour-over filter and to pour over the grinds

  • 3 Tablespoons Dam Good Coffee (Rough Grind)
  • 1 to 2 tablespoons grass-fed butter (Kerrygold Unsalted Silver)
  • Up to 2 tablespoons of MCT Oil (I use this)

A word about the MCT Oil — start slow. I started with 1 teaspoon and worked myself up to 1 tablespoon over 2 weeks. Google “Disaster Pants”. Enough said.

In a blender, mix your coffee, butter and MCT oil. If you need a sweetner, throw in some Xylitol. I usually mix it for about 30 seconds, the last 10 seconds on high. What you get is a frothy, latte-like coffee that gives you energy without the java jitters for hours. All without breaking your fast. I drink this everyday.

Example Lunch — Smoked Salmon, avocado and sea salt

This is the easiest lunch to make, Get an avocado, wrap it with a slice from a package of smoked salmon and top it with some sea salt. 5-minutes of prep-at most!

Example dinner — Steak with Butter, Broccoli with butter

I eat about 4 to 6oz of steak and 1 serving of broccoli. I actually get the steamer packages of vegetables, becasue it’s easier. I love asparagus also.

To track my food I’m using the paid version of Lifesum, especially my carbs. What’s great is that I have so much energy I want to move more — I get off the bus and walk, I get home and do a quick workout with a kettlebell, I just move. And my chemo fog is gone and have so much focus at work. And the most important thing — I’m enjoying life and laughing more.

I feel better now than in years and I’m back to being myself, pre-cancer Jane.
